Recipe: Easy Pineapple Banana Cobbler

Looking through my fridge and pantry for something to take to a barbecue tonight, I was at a loss. I had fresh pineapples and bananas, but couldn’t find any recipes online that sounded good, or that I had ingredients for. So, I whipped up my own creation. It’s summery, yet has substance (and isn’t particularly healthy, so enjoy in moderation).

Filling:

1 1/2 cups fresh pineapple, cut into small pieces
2 bananas, sliced
1 cup brown sugar
Dash of cinnamon
Dash of vanilla

Simmer on medium heat until all ingredients are well-blended. Pour into 8×8 pan.

Crust:

Here’s where I cheat a little. I love the shortcake recipe on the Bisquick box.

2 1/3 cups Original Bisquick mix
2/3 cup milk
3 Tbsp sugar
3 Tbsp butter, melted

Stir all ingredients together until dough forms. Drop by large spoonfuls onto cobbler filling. Sprinkle a touch of brown sugar on top if you’d like a little crunch. Bake for 15 minutes (or until crust begins to brown). Serve with vanilla ice cream or whipped topping if desired.
